Versatile Fresh Fruit Drinks


Some drinks go with different fruits really well and probably became famous as having fruit in them, but drinks like a Margarita and Daiquiri had only a little citrus juice in the original recipes. Most bars now especially in Asia serve more Strawberry Daiquiris than an original Daiquiri, or more Lychee Margaritas or Mango Margaritas than the original Margarita, fresh fruit tastes great with the right spirit, example I wouldn’t recommend putting a Banana or jackfruit with Tequila in a Margarita, the starchy fruits work better with White Rum in my opinion, Tequila is a strong flavourful spirit and needs sweet or sour fruits in my opinion and some fruits that are strong and starchy in flavour need lighter spirits like White Rum. Another example is if you use aged Rum in a Daiquiri then maybe delicate sweet fruits like Lychee’s or Mangos might not work. The following recipes are only guidelines so follow your instincts, but the most simple things to follow is delicate fruit use light spirits, stronger fruit (very sour or flavourful) use stronger spirits, starchy creamy fruits use a White Rum




Daiquiri

A Daiquiri is a Rum based drink with lime and sugar, and some fruits work better then others, I believe that the Banana was the first to be blended and also the Strawberry, these two definitely work well with the Rum, you can mix up anything you like try Watermelon or Dragon Eye or Star Fruit, but remember all fruits are different so some changes to the sugar and Lemon content might need to be increased or decreased.

What’s the best fruit?
Banana, Strawberry, Blueberry, Pineapple, Peach, Apricot, Honeydew Melon, Lychee plus anything of your choice is worth a go, and remember all fruit can sometimes be used in puree form which is much better if your making more than two or three, it helps with consistency (blog on purees to follow)

Basic Fruit Daiquiri Recipe
1 ½ oz Cuban White Rum
½ oz Fruit Liqueur (if available) or try to get a fruit syrup
½ oz Fresh lemon Juice
¼ oz Sugar Syrup
3-4 oz fresh Fruit (Approx: 1x Banana, 5-6 Strawberry’s or 3 oz of Puree, 1 x 1” Ring Pineapple, ½ Peach, 2 x Apricots, 2 x dessert spoon blueberry, 3 oz Lychee Juice mix, 4 x 1” cubes Honeydew Melon)
Crushed Ice ¾ of the Glass you wish to use, or cubed ice 1 glass size

Method
Use a Daiquiri glass or a Margarita glass about 15 oz, put all ingredients into a blender and blend for about 10 seconds until thick, but pourable.
Some fruits need less sugar added than others and example; if you want to make a Passion fruit Daiquiri then take out the fresh lemon juice, so what fruit your using add the sweet and sour condiments bit by bit for the first drink, use this recipe as a guide, I don’t recommend passion fruit for a Daiquiri they work better in a Margarita


Margarita

This is still mostly drunk as a normal drink using fresh lime juice and once I had a order from a customer asking for a Lime Margarita, I think they had the idea that a Margarita came with the fruit you wanted, which is ok, but it made me aware of some peoples ideas and I started to ask customers “would you like a regular lime Margarita or would you like some other fruit”. The best fruit in my opinion is powerful fruits with either acidity or sweet flavour. Passion fruit is sometimes too sour, but very popular and possibly can kill the drink, but some people like it so just remove the fresh lime or put less lime juice and add little bit more sugar syrup

Basic Fruit Margarita Recipe
2 oz Tequila
½ oz Fruit Liqueur (if available) or try to get a fruit syrup
½ oz Fresh Lime Juice
3-4 oz fresh Fruit (Approx: 5-6 Strawberry’s, 4 Can Lychee, ½ Mango, ½ Peach, ½ Guava, 1 x Kiwi, 12x Blueberry)
Crushed Ice ¾ of the Glass you wish to use, or cubed ice 1 glass size

Method
Use a Daiquiri glass or a Margarita glass about 15 oz, put all ingredients into a blender and blend for about 10 seconds until thick but pourable. Some fruits in Margaritas need no sugar (or very little) added than others might, example; if you want to make a passion fruit Margarita this time then change the fresh lime juice to sugar syrup



Batidas

This is a Brazilian Milkshake with Cachaca which is a spirit distilled from Sugar cane, this type of drink is good in western culture, but in Asia mixing cream with most fruits is not common in most bars as the drinks aren’t popular to sell

What’s the best fruit?
Mango, Passion fruit, Papaya, Pineapple, Peach, Guava, plus anything of your choice is worth a go, and remember all fruit can sometimes be used in puree form which is much better if your making more than two or three, it helps with consistency
Basic Fruit Batidas Recipe
2 oz Cachaca
3-4 oz fresh Fruit (Approx: 1x Banana, ½ Mango, ½ Peach, ½ Guava, 1 x 1” Ring Pineapple, ¼ Papaya)
1 oz Cream or Half & Half
Bar spoon white granulated Sugar (not sugar syrup)
Crushed Ice ¾ of the Glass you wish to use, or cubed ice 1 glass size

Method
Use a Hurricane glass or Cocktail glass about 15 oz, put all ingredients into a blender and blend for about 10 seconds until thick but pourable
This recipe works ok with most fruits and doesn’t need to be changed much but you can always add some sweetness either by more sugar or fruit liqueur as the cream is fatty or even a little bit more fruit
