Punches

Café Brulot
This is an after dinner punch that must be served only when needed and prepare it in front of the guests as the coffee must be hot, read the method below as there is a little preparation.

Recipe
8 oz VSOP Cognac
1 liter Fresh Brewed very Hot Coffee
3 Bar spoon Sugar
1 Orange peeled in a Spiral
1 Lemon peeled in a Spiral
8 cloves
2 Cinnamon sticks
1 oz 151 Rum
2 oz Orange Curacao

Serving Approx: 8 People 1 glass each
Glass: Coffee glass no ice
Drink Garnish: none


Method
The Cognac, 3 spoon Sugar, Orange spiral peel, Cinnamon, 8 cloves, and Curacao goes in to a bowl and stirred then cling film and leave to stand
Some people use a vanilla pod (optional),
Now you will need a larger bowl, preferably silver and get a ladle, put the prepared mixture in the bowl then with a fork hold the lemon spiral over the mixture then pour in the hot coffee and then drop the 151 slowly down the lemon spiral from the top and light and the flame it should spread across the top of the coffee and let it burn and after showing people your Lemon spectacle then serve


Champagne Rum Punch
Recipe
1 Liter White Rum
1 Liter Aged Rum
300 ml Rosso Vermouth
2 Liter Fresh Orange Juice
12 oz Cranberry Juice
12 oz Fresh Pineapple Juice
4 oz Fresh Lemon Juice
4 oz Sugar Syrup
Add last
750 ml Champagne

Serving Approx: 15 People 2 glass each
Glass: 6 oz Champagne glass no ice
Drink Garnish: no fruit
Punch Garnish: 5 Chopped Strawberries / 1 Chopped Orange / 1 Chopped Lemon / 1 Chopped Lime all for the punch bowl

Method
Store all ingredients in the fridge overnight, and prepare the large ice cubes (use plastic bags with seals for large ice cubes) Pour ingredients in to a large bowl (8 Liter capacity) in order listed, this is another simple punch, only remember to taste as you go and add the large ice cubes at the end just before the guests arrive, then gently stir and then add the chilled Sparkling wine right at the last moment with the chopped fruit, one last gentle stir, a little taste don’t forget to smile when tasting in front of your guest this will serve 15-20 guests one glass use a 8-10oz wine glass or I prefer a Champagne saucer, try not to get any fruit in the glass, but if you have someone serving the Punch you can prepare maybe 15-20 pieces of say Lychee on a stick and put it in the drink or maybe a decoration garnish of your choice.

Champagne Punch
Recipe
½ lb White granulated Sugar
2 Oranges Sliced
6 oz Fresh lemon Juice
6 1” Slices of Fresh Pineapple (no Skin)
8 oz Raspberry Syrup or Grenadine
Add last
2 Btl Champagne

Serving Approx: 5-6 People 2 glass each
Glass: 6 oz Champagne glass no ice
Drink Garnish: no fruit
Punch Garnish: 5 Chopped Strawberries / 1 Chopped Orange / 1 Chopped Lime all for the punch bowl

Method
Store all ingredients in the fridge overnight, and prepare the large ice cubes (use plastic bags with seals for large ice cubes) Pour first 4 ingredients in to a large bowl (4 Liter capacity) and stir to coat all fruit with sugar and fresh lemon juice, then crush the fruit with a muddler to extract more juice, then just before the guests arrive add 2-3 large ice cubes depending on the size of your punch bowl, and then the two bottles of Champagne. When you serve the punch try not to get any fruit from the punch bowl in the drink, so if you want a garnish then prepare separate garnish (say a raspberry and piece of pineapple on a stick to put in the drink when serving

Pineapple Cocktail Punch
Recipe
1 Whole Pineapple cut in to 1” cubes
2 Btl Dry White Wine (Fruity but no Oak)
1 Btl Fino Sherry
16 oz Fresh Pineapple Juice
4 oz Fresh Lemon Juice
2 oz Sugar Syrup

Serving Approx: 8 People 2 glass each
Glass: 8 oz Martini glass no ice
Garnish: Each glass with slice Pineapple

Method
Put the Pineapple chunks in a large 4 Ltr jug and press down with a Potato masher to bruise only, don’t press down like muddling, then add the 2 Btl of White wine and marinate for 2-3 hours then add rest, gently stir then chill overnight, Then stir again and strain in to a separate jug so now its clean with no floating bits, when serving either pour 4 oz in a cocktail shaker and shake & Strain in to a Martini glass or just pour straight in to a Martini glass it should be cold enough, it just depends on the show you want to make, if you want to add a spirit maybe aged rum should be ok, add a few ounces to taste and keep adding until its to your taste

Pineapple Punch
Recipe
4 Whole Pineapple cut in to 1” cubes
4 Btl Champagne
½ Btl Dark Rum
4oz VSOP Cognac
2 oz Orange Curacao
6 oz Fresh Lemon Juice
1 lb Granulated Sugar


Serving Approx: 12 People 2 glass each
Glass: 8 oz Martini glass no ice
Garnish: Each glass with slice Pineapple

Method
Put the Pineapple chunks in a large Punch Bowl and press down with a Potato masher to bruise only, don’t smash them to pulp but press down like muddling so they are half way between original Cubes and pulp, add sugar and fold in then let stand for couple of hours. Then add rest except Champagne and Fresh lemon Juice, and stir gently for about 5mins adding the fresh lemon juice bit by bit and tasting as you go, stop when you think its enough or even add more if you need to. Again let it stand only for 1 hr this time and also in the fridge, remove before party when needed, then add the large piece of ice and the Champagne. In my mind its not necessary to garnish the punch in the bowl but have about 20-30 Pineapple wedges for garnish each glass

Southern Pimm’s Punch
Recipe
500 ml Pimm’s NO 1
500 ml Bourbon
8 oz Rosso Vermouth
8 oz White Rum
2 Liter Fresh Orange Juice
4 oz Fresh Lemon Juice
4 oz Sugar Syrup
5 Dash Peychaud Bitters
Add last
1 Liter Sprite
1 Liter Ginger Ale

Serving Approx: 15 People 2 glass each
Glass: Martini glass no ice
Garnish: 5 Chopped Strawberries / 1 Chopped Orange / 1 Chopped Apple

Method
Pour in order listed, this is a simple punch, only remember to taste as you go and add the large ice cubes at the end just before the guests arrive, then gently stir and then add the chilled Sprite and ginger ale, add more if necessary

Hot Buttered Rum
Recipe
Butter mix
Take a wrap of butter and soften slowly over a boil of hot water till its soft enough to be able to mold and then ground up the following then add and mix well, then get some grease proof paper and put the Butter mix in single portions of the size of 1 cm cubes and then place in the fridge until set

1 oz Spiced Rum Coffee Glass with handle no ice

Watermelon Punch
Recipe
1 Whole Water Melon
4 oz Fresh Lemon Juice
6 oz Triple sec
8 oz Bacardi Limon
4 oz Maraschino Liqueur
1 oz Sugar Syrup

Method
Cut the top off the Watermelon as to use it as a bowl plus cut the bottom slightly so it’s a little flat for the melon to be more stable, hollow out all the watermelon meat and put in a blender to make the juice, then put the juice in a jug and stir in the rest ingredients, put in the fridge to chill then serve in the Watermelon bowl prepare it just before the guests arrive so keep the liquid in the fridge to the last minute, ladle the mix out in to the ice filled highballs and garnish. This Punch you can prepare 3 or 4 Watermelons for your table and maybe make 2 different ones one with Bacardi Limon and One with maybe Ketel one Citron or another spirit of your choice. Nice and quick one this and flash for a small dinner party aperitif

Wedding Bell Punch

Recipe
4 oz Fresh Lemon Juice
2 Btl Red Wine (Merlot or Low Tannin Wine)
500 ml Aged Rum
1 Liter Bourbon
8 oz Crème de Cacao White
8 oz Rosso Vermouth
8 oz Granulated Sugar
3 oz Boiling water
Add last
1 Btl Champagne
1 Liter Soda water
1 Liter Ginger Ale

Serving Approx: 20 People 2 glass each
Glass: Champagne glass no ice
Drink Garnish: None
Garnish: 1 Chopped Lemon/ 1 Chopped Orange / 1 Chopped Lime

Method
First dissolve the sugar in the Fresh Lemon Juice and Hot water, remember to taste as you go add the rest and stir gently then add the large ice cubes at the end just before the guests arrive, then gently stir and then add the chilled ginger ale / Sparkling wine then slowly add Soda water and taste as you go, add more if necessary

Planters Rum Punch
Recipe
1 Btl Myers Dark Rum
1 Btl Gold Bacardi Rum
1 Ltr Fresh Orange Juice
1 Ltr Fresh Pineapple Juice
1 Ltr Fresh Grapefruit Juice
15 oz Centifloral Honey
15 oz Fresh Lime Juice
2 oz Grenadine
Bar Spoon Angostura Bitters


Serving Approx: 15 People 2 glass each
Glass: Highball glass no ice
Drink Garnish: Pineapple wedge/Cherry and umbrella if you want (prepare 30-35 sets)
Garnish: 10 x Lemon wheels/ 1 Chopped Orange / 1 Chopped Lime

Method
You need a large Punch bowl 6-8 Ltr, first dissolve the Honey in about 3 oz of very hot water, add more if necessary to make the honey very runny and mixable. Then add all ingredients except Spirits and stir gently for about 5 mins. Add spirit bit by bit and taste as you go to make sure it’s to your liking. Once its ready store in the fridge to chill for approximately 4-5 hours, when the guests are about to arrive, set up and put large ice cubes in the bowl and garnish, prepare separate garnish for drinks.

Mulled Wine
This is a beautiful drink that can be served during the winter months to warm you up inside. When you taste a good one its hard to stop drinking it because you know you will never taste it again. Mostly all mulled wine is made by the bartender to a basic recipe but for some reason it seams to taste different each time and the fun in making it is adjusting it to taste. The recipe that follows is in my mind the best I ever tasted and was confided to me by my friend Steve House who was Managing a small bar / restaurant that had a small outside open area and during the winter his Mulled wine was perfect. He only made one and once it was gone rarely made another. I hope you can make it as good as he did, but use this recipe and guidelines. My friend also recommends a copper pot and a muslin bag for easy removal of the cinnamon and fruit skins.



Ingredients
2x Bottles of Red wine (preferably Merlot, Cab sav, or Shiraz) Steve says most wines work well but make sure it has a good fruit content. Better from New world like Australia and Chile
20x Cloves
2 stick Cinnamon
1 Lemon
1 Lime
1 Orange
6-8oz Sugar (white or brown is ok for your preference)
3 oz Triple sec
4 oz VSOP Cognac
4 oz Port (optional)

First thing is to prepare your fruits, push all the cloves in to the orange skin evenly then take off only the skin from the lemon and lime and make sure no pith is left on the skin, then juice the Lemon and Lime and put the juice aside. Take your Pot, put in the wine and sugar (only put half sugar first, add the rest after tasting if you need more) and start to heat up very slowly, and then take your fruit juice and add, and add the Orange with cloves, plus the Lemon and Lime skins, next brake up the cinnamon sticks and drop in. once you feel its nearly boiling bring the heat down and simmer very gently and add the spirits (half first). This is all to taste so after you stir it if you want more sugar add more, if you think its time to take out the cinnamon because its getting to bitter and woody take it out, if you might think you want to spice it up add more cognac, or even add more wine to soften it up, or a few ounces of port. What ever you decide is up to you what you think is nice for you and your guests.

Sangria
Recipe
1 Bottle red Wine
2 oz VSOP Cognac
1 oz Orange Curacao
3 oz Fresh Pineapple Juice
2 oz Sugar Syrup
1 Piece Lemon/Orange/Lime

Serving Approx: 2-3 people (2-3 glasses each)
Glass: use a 10 oz Wine glass (but fill only half way)
Drink Garnish: Orange Slice and Lime wedge
Garnish: Chopped fruit 1 Lemon, 1 Lime, 1 strawberry

Method
You need a large jug about 1.5Ltr, first muddle the fruit piece with the sugar syrup then add all ingredients and stir then store in the fridge for a couple of hours and then remove when you need to serve. Use a glass of 10 oz so then you only fill the glass up half way and garnish with a couple pieces of fruit. Just double the quantity if you want to make it for about 6 people. This is a basic sangria recipe, experiment with different fruit, the best are peach, strawberries, blueberries, and any berry’s actually, try any fruit but try to keep them light. Example bananas wouldn’t work because there too starchy and creamy, that’s only my idea though.
